Baking Up Business: Why Valentine’s Classes Sell
As home bakers (cottage food bakers), we know that selling cookies is feast or famine. Valentine’s Day is a feast! And one of the best ways to maximize that holiday window without burning out on custom orders is by hosting cookie decorating classes. Your customers want a fun, low-pressure date night or a unique girls’ night out.
The secret to a successful class isn’t complex artistry—it’s offering beginner-friendly designs that look instantly gorgeous, making students feel successful. These valentine cookie decorating ideas are simple to execute, easy to prep for, and guarantee happy customers (and great photos for your next class promotion!).
3 Valentine’s cookie class ideas your students (and Instagram) will love
1 – The Polka Dot Heart
The Design:
Use a large, classic heart cutter. Focus on simple techniques like flooding with a single color (pink or red) and adding a wet-on-wet design (like simple dots). For maximum visual impact, I recommend using cookie cutters that are 3 to 3.5 inches in size.

Focus: The Perfect Flood
Since flooding is the foundational skill for royal icing, dedicate extra time here. My biggest tip for my students to help them perfect their flood is to keep the tip of the icing bag in the icing as it comes out of the bag to prevent ‘holes’ in the flood. This technique creates a beautiful, thick flood every time.
Extra: Adding Lace (Advanced Beginner Skill)
If you have been teaching classes for a while and you’re looking to add in a more ‘advanced’ skill, you can include lace around the edge of the heart. Lace is a fairly easy technique that pays off big in presentation. Your students will feel so accomplished! (If you add this element, remember you’ll need to add brushes to your student tool kit.)
2 – Trendy Lips
The Design:
Use a plump, trendy lip cutter. This is a fun cookie for teaching highlighting. The highlighting technique is accomplished by simply piping wet-on-wet white accent lines to define and accent the curves of the lip.

Focus: Creating ‘Sections’
Teach your students how to create distinct sections on their cookies! Allow the top lip to crust slightly before flooding the bottom lip. This small waiting period helps create the clean separation between the two sections.
Extra:
Want to add a little extra flair? After flooding, spritz the lips with diamond dust to give them a shimmering effect.
3 – The X&O Set
The Design:
The Hug (X Cookie): This design is fantastic for beginners. Creating a plaid pattern is a rather simple technique that creates an impressive result. Students will flood the cookie in a light color (like pale pink) and immediately use thin lines of two different colors (red and white) to create the intersecting plaid pattern.
The Kiss (O Cookie): This cookie design is always a student favorite! The results are so impressive, students often think it will be hard to achieve. To complete this cookie, students will flood the entire “O” in one color (the lighter pink) and then immediately draw horizontal wet-on-wet lines of contrasting color (like white and red) onto the wet base. They will then use a scribe tool or toothpick to gently drag through the colors, creating that beautiful, mesmerizing chevron effect.

Focus: Perfecting the Line
The key to both the plaid and the chevron is line consistency. Have your students practice piping straight, even lines on parchment paper or a piping practice sheet before they start the plaid pattern. For the “O,” emphasize that they must work quickly while the flood icing is still wet!
Baker Prep Tip:
Use thick, chunky letter cutters to capitalize on the full effect of these wet-on-wet designs.
Extra:
The tiny heart piped in the plaid adds a sweet finishing touch. This heart is SO simple! It is actually created in two quick steps: pipe a white wet-on-wet dot and then drag the scribe down through to ‘pull’ a heart shape.
